This 20 Minute Spinach and Tomato Gnocchi is a fast, one pan meal delivering a punch of flavor with minimal ingredients. Great for busy weeknights.

I often get asked “how do you develop your own recipes?” and “where does your inspiration come from?”

The truth is, I do not have a fancy culinary degree (I have a degree in Sociology), nor do I have extensive experience working in restaurants or around food (I worked in little diners and bars in college). However, I do have extensive experience in eating at restaurants and I have a passion for healthy, fresh cooking. Eating is something I do extremely well haha! So when I have something amazing, I always want to try to recreate it at home with my own healthy twists.

The inspiration for this 20 Minute Spinach and Tomato Gnocchi came from a new Italian restaurant that opened up near me. My husband and I were blown away by this Gnocchi they served as an appetizer that we went every date night we could before baby Rylie was born. Then it was the first recipe I knew I had to recreate once I was back up and running in my kitchen.

The ingredients for this dish are simple and classic, and are easily found in your every day grocery stores – no hunting for obscure things here!

Staples you probably already have on hand: Olive oil, butter, garlic: and if you are a mom white wine!! haha

Produce: Red onion, baby spinach, cherry tomatoes

Optional Toppings: Parmesan cheese and red pepper flakes

And of course the Gnocchi!

The technique for this recipe is as easy at is gets: saute, add ingredient, saute again, add ingredient —–then viola, dinner is served!

Ingredients

 4 tbsp butter
 4 tbsp olive oil
 ¼ cup white wine
 5 cloves garlic - minced
 ¼ small red onion - diced
 5 oz baby spinach
 1 pint cherry tomatoes- halved
 16 oz packaged gnocchi
 ½ tsp salt
 ¼ tsp pepper
 parmesan cheese - for topping
 red pepper flakes - for topping

Directions

Add butter and olive oil to large skillet, heat over medium/high heat. Once the butter is melted and foaming, add gnocchi, salt and pepper: pan fry for 10 minutes: stirring every 2 to ensure even browning.

Add onion and garlic and saute lightly for 2 minutes.

Pour in wine, scrapping up any bits that may be stuck to the bottom, let reduce 1 minute. Toss in spinach and tomato and saute until just wilted, turn off heat immediately.

Top with Parmesan cheese and red pepper flakes.
