This Breaded Chicken, Cheesy Orzo and Italian Style Vegetables uses traditional Italian flavors, and fresh summer garden vegetables. Perfect for a busy weeknight

For me, there is something about the smell of pan fried breaded chicken that reminds me of being home. I am immediately taken back to the 90s, when the times seemed easier, and the feel of being a kid just enjoying the outdoors on a hot summer evening.

So you could say this Breaded Chicken, Cheesy Orzo and Italian Style Vegetables is a sort of comfort food for me. As I write this I am 34 weeks pregnant, super emotional and reminiscing about ALL the things sentimental in my life, and how I want the same for my kids.

I hope this traditional, simple meal can bring some comfort and flavor to your dinner table tonight.

Right now grocery stores are booming with bright red tomatoes and zucchini’s the size of your head! But the great thing about this recipe, is this produce is easily found all year round. So whether you are enjoying them straight from your garden or the local supermarket, the flavor will bring out the taste of Italy in the most fresh way possible.

The freshness of the vegetables and crisp chicken do most of the flavoring in this dish, but to amp it up just a notch I used pre-mixed Italian Seasoning. If you don’t have any on hand simply mix together: Oregano, Thyme, Marjoram, Basil and Sage.

I found when I was first starting out, when it comes to recipes that aren’t all done in one pot, that timing the different components to be the most difficult. Check out when to start what before you start preparing this dish:

  1. Bread your chicken first and set aside so it’s ready to go
  2. While your vegetables are sauteing, this is when you want to start cooking your orzo
  3. The orzo will continue to cook while you pan-fry your chicken.
  4. Mix remaining ingredients with orzo, top with chicken and vegetables.

Ingredients

 4 boneless, skinless chicken breasts or two large cut in half lengthwise: pounded thin
 1 pint cherry tomatoes - halved
 1 tbsp Italian seasoning
 2 zucchini - chopped
 6 oz orzo
 1 tsp salt
 ¼ cup parmesan cheese
 ¼ cup panko bread crumbs
 4 oz shredded mozzarella
 1 lemon
 1 tsp black pepper
 4 tsp olive oil

Directions

In a shallow bowl mix your parmesan, panko, salt and pepper. Then take each chicken breast and press lightly into the mixture coating both sides. Set aside

Heat 2tsp oil in a large skillet until shimmering – I like to use cast iron for this dish as it gives the breading a good crunch, but use whatever you have on hand. Once shimmery sauté tomatoes, zucchini and Italian seasoning for about 4 minutes. You want them to be tender but not mushy. Remove and set aside

While the vegetables cook prepare orzo according to package directions

Heat remaining 2 tsp olive oil over medium-high heat. Once shimmering add chicken and cook about 5-7 minutes on each side or until no longer pink. Add vegetables back to the pan and keep warm

Toss Orzo with Juice from 1 lemon, mozzarella cheese and additional salt and pepper.

Serve by layering a plate with orzo first, chicken second and topped with vegetables. Enjoy!
