These Cream Cheese, Jalapeno and Bacon Taquitos have a mild heat that is mellowed out by smooth cream cheese. Perfect served as a dinner, snack or appetizer!

Something amazing happened this summer! I went away on a girls trip! Seriously, guys, I haven’t been away from my family since my son was born, so this was a HUGE deal. And it was exactly what this Momma needed, full of laughs, delicious food and home decor.

Me and my two boss babe girlfriends, headed to Dallas and Waco, TX to check out our idol Joanna Gaines’s empire. It did not disappoint! Everything from Magnolia Table restaurant to The Magnolia Market at the Silos was so inspiring. So you would think one of my recipes would be inspired by her, but in reality, you just can’t compete with Joanna! So no, but my recipe is inspired by an amazing restaurant we ate at in Dallas called The Cedars Social.

This restaurant’s decor reminded me of being in a grandparents basement circa 1970 – no I wasn’t born yet, but it’s how I imagine it would be. And the food was derived from Oaxaca, Mexico, which at the time, my little brother happened to be living. So there were a lot of little quirks and tie in’s that made this place special.

We each ordered something different so we could share and sample each others dishes, but the “tacos of the day” that I ordered really were the shining star! That is what inspired me to make a more family friendly version so that everyone could enjoy the incredible flavors, and I’m sure your family will love them to!

I first made sure I used ingredients that could be found in everyday grocery stores. The main swap being the Oaxaca cheese for cream cheese, in total you will need

Cream Cheese: Take this out about 1 hour before you plan to cook to bring it to room temperature.

Jalapeno: The cream cheese really dulls the spice in these chiles, so I wouldn’t worry about the heat bothering anyone sensitive to spice.

Bacon: Use kitchen sheers to get the bacon diced into very very small pieces.

Onion: Again make sure this is very finely diced

Cilantro: Cilantro adds an amazing freshness to this recipe, but if you aren’t a fan, it is totally optional

Lime: Can you really have a Mexican dish without lime!?! But really this helps smooth out the cream cheese perfectly

Corn Tortillas: Corn tortillas give this dish the traditional Mexican flavor, but they can be difficult to work with. So make sure to follow the instructions and heat before rolling

And it’s really just fill and roll!

1- Make caramelize onions and bacon

2- Mix together cream cheese, jalapeno, lime, cilantro, salt and pepper

3. Roll in a tortilla

4. Bake at 350 for 30 minutes

5. Serve!

I served these Cream Cheese, Bacon and Jalapeno Taquitos for dinner alongside some home made guacamole. But these would also make a great after school snack or party appetizer!

Ingredients

 12 corn tortillas
 8 oz cream cheese - room temperature
 2 jalapenos - minced
 1 tbsp cilantro - minced
 6 oz bacon - diced
 1 small yellow onion - diced
 ½ lime - juiced
 salt and pepper to taste

Directions

Preheat oven to 350. In a medium skillet over high heat, add bacon and saute until crisp. Remove to a paper towel lined plate to drain

Leave 1 tsp bacon grease in skillet and discard the rest. Add onion and saute until caramelized. About 8-10 minutes. Combine bacon and onion in a small bowl and set aside

While bacon is cooking, mix together: cream cheese, jalapeno, cilantro, lime juice, salt and pepper in a medium bowl.

Wipe out the bacon and onion skillet. Over medium/high heat soften tortillas for 10 seconds per side, until they are flexible to work with.

Add 1 tbsp cream cheese mixture and 1/2 tbsp bacon mixture to each tortilla. Roll and place seam side down in a 9X13 baking dish. Bake for 30 minutes or until crisp.
