A toasty delicious Cubano Sandwich for the Instant Pot, inspired by Potbelly Sandwich Works. The sweet meat, tangy pickles and dijon mustard make an explosion of flavor that is not to be missed!

So this recipe all started when my bestie called (or lets be real, texted, because with both of us having kids under 4 who can hear a phone call?) and said I just HAD TO recreate the Cubano sandwich from Potbelly, because she just needed to know how to make it. Admittedly I had never had a Cubano, from anywhere, so I wasn’t sure what I was getting myself into. Being that I’m pregnant and ALWAYS HUNGRY I certainly obliged and went to Potbelly that afternoon and got to work!

Now here is the catch – this bestie of mine isn’t super savvy in the kitchen so I knew I needed to make it as simple as possible, and I certainly think I was able to make that happen for her.

The ingredient lineup is simple and made of items found in everyday grocery stores.  Of course I wanted my pickles to be just right and made them from scratch, which literally would take you an additional 5 minutes of prep and some cucumbers – you can find that recipe here, but store bought sweet pickles will work just fine.

Pork Shoulder: Pork shoulder is a relatively inexpensive cut of meat, with a good amount of marbling (aka: fat) that gives this sandwich the perfect amount of grease and flavor. If you can, buy it with the bone-in and remove after cooking

Ham: Any kind of deli ham will be fine. I used the 365 brand of honey ham from Whole Foods.

Swiss Cheese: Isn’t this a staple in everyone’s deli drawer? If not it should be!

Sweet Pickles: As mentioned above, store bought or homemade will be great

Dijon Mustard: Again another refrigerator staple

French Rolls: Traditionally these sandwiches are made on a Cuban sweet bread, but since I was going for the Potbelly copycat, and always use ingredients easily found, I opted for these rolls instead

I chose to create this Cubano Sandwich for the Instant Pot – mostly because I know it’s really hot right now and all the Moms want to use their new toys! LOL! But it can certainly be adapted for the slow cooker, just place in the slow cooker and set to low for 8-10 hours, then follow the directions as instructed.

Secondly, the step which includes the crisping of the meat (as pictured above) is totally optional. It is more of a texture thing, not necessarily enhancing flavor. So if you aren’t up for this step, simple skip over it and start building your sandwich.

Potbelly Copycat: Cubano Sandwich for the Instant Pot

Ingredients

MARINADE
 4 lbs pork shoulder
 2 tsp salt
 ¼ tsp pepper
 ¼ cup orange juice
 ¼ cup fresh lime juice
 2 tsp ground cumin
 2 tsp dried oregano
 4 cloves garlic - minced
 2 bay leaves - left whole
SANDWICH
 6 french rolls
 12 slices Swiss cheese
 12 slices deli ham
 Dijon mustard

Directions

Combine all marinade ingredients in a medium bowl and whisk until well combined. Place pork shoulder in a gallon sized zip top bag, add marinade, squeeze out the air and seal completely. Place in the fridge overnight

When ready to cook, place pork shoulder and all marinade into Instant Pot - set on manual high pressure for 90 minutes and let it natural release.
**You could also do this in the slow cooker for 8-10 hours on low.

Once pressure is released, place meat onto a large, rimmed baking sheet and set the broiler to high. Shred meat with two forks and spread evenly in one layer. Take 1/4 cup remaining juices from the instant pot and toss with the meat. Place under broiler for 2-3 minutes - or until edges are crispy. Using a spatula, flip over and broil an additional 2-3 minutes. Remove from oven and set aside, leaving broiler on.

Open each french roll and place two pieces of Swiss cheese and two pieces of ham on each. Place under the broiler until bread is toasty and cheese is melted - about 3 minutes. Remove from oven. Top with sweet pickles, dijon mustard and shredded Cuban pork. Serve immediately and enjoy!
