Why should you eat vegetables? I know that you hear it all the time, and there are countless tips out there on how to get more veggies into your diet, but have you ever wondered WHY? haha!
The short answer is that vegetables are the main source in which we obtain essential vitamins and minerals that are scarce in other foods like meat, dairy, and grains. Ok, so why are these vitamins and minerals important?
First – these compounds are what fight off disease and keep the body functioning properly. Just a few examples:
- The dietary fiber found in vegetables can help fight off heart disease, obesity and Type 2 Diabetes
- Vegetables rich in potassium can help reduce the blood cholesterol levels in the body
- A plethora of other vitamins and minerals, that are too many to mention, have been proven to help fight many cancers as well.
Second – Vegetables are naturally low in calories and fat, and are experts at fueling the body with the good stuff. It’s a well known fact that I’m a pasta girl, (I talk about it almost daily), but by adding vegetables abundantly I am able to keep my body healthy, fuel it properly, and eat pasta on the regular!
Lastly – but certainly not least – vegetables are a great way to add variety to your diet and make it more visually appealing! I know that sounds silly, but really it’s not. We eat just as much with our eyes as we do with our mouths. You are more likely to eat a dish that looks appetizing, and the colors in vegetables can help you do just that!
